Keto Coconut Raspberry Cupcakes


Delicious low carb Valentine cupcakes. Nothing says I love you like coconuts and raspberries!


PREP TIME 5 minutes

COOK TIME 30 minutes


Ingredients


For Cupcakes:

1 cup Coconut Flour

1 cup Almond Milk (Unsweetened)

7 Large Eggs

1/2 cup butter

1 Tbsp Baking Powder

3 Tsp Pure Vanilla Extract

1/2 Tsp Salt

3/4 cup Erythritol

1/2 Tsp Liquid Stevia


For Frosting:

16 oz Cream Cheese

28 Fresh Raspberries

1 cup Butter

1 Tbsp Pure Vanilla Extract

1/4 cup Erythritol

1/2 Tsp Liquid Stevia


Instructions


For Cake

  1. Preheat oven to 350

  2. Powder Erythritol in a food processor

  3. Mix all ingredients in a large bowl and mix until well blended

  4. Pour into silicone baking cups and bake for 28 - 30 minutes (until a toothpick comes out clean)

For Frosting:

  1. Melt butter

  2. Mix all ingredients in a large bowl until light and fluffy.
